Acadia (1303 NE Fremont St.; 503-249-5001)
1 1/2 oz. Laird’s Bonded Apple Brandy
3/4 oz. lemon juice
1/2 oz. Pimm’s
1/2 oz. simple syrup (2:1)
1 Tbsp Apple Butter
1 Tbsp Absinthe (St. George is preferable)
1 pinch Cinnamon
Stir all ingredients with 5-6 oz very hot water until incorporated. Optional garnish: apple slice and a few cloves.

The absinthe adds a light anise note, lemon and cinnamon round out the palate. You wanna drink this while watching college football in New England while wearing a cable-knit sweater.”
