(16 of 20) Vivac (Highway 58, Dixon, NM; 505-579-4441) means “high-altitude refuge” in Spanish. The vineyards and winery are owned and operated by the Padberg brothers, Jesse and Chris. These young entrepreneurs purchased their first liquor license before Chris was even old enough to drink. That was over 10 years ago. Vivac specializes in dry reds and makes award-winning wines such as a Syrah, Merlot and Cabernet Sauvignon. They recently added dry whites to the vineyards.
