Both on the rim and in the glass, salt is not just for margaritas anymore. These bar programs are finding unique ways to draw savory flavors out of their spirits with different types of flavored salts.
Aviary: Go for the Dr. Redenbacher’s Good Time Flip, with popcorn infused rum, egg white, lactart, and vanilla salt (1733 NE Alberta St; 503-287-2400).
Free House: You want to sip on the Rule of Two, with rum, lime, Falernum, Cassis, salt, and cinnamon (1325 NE Fremont; 503-946-8161).
Teardrop: Check out Salt-n-Pepa, a cocktail out of the “Friends” section of the menu, from Katie Stipe of Pirme Meats in NYC.
