Riffle: This inventive bar has featured cocktails on tap since it opened last summer but has moved on to expand this service to include more taps and food pairings for happy hour. Every Tuesday-Sunday from 5-7 PM you can try a taste of all three current cocktails on tap paired with catch and market inspired bites for just $20 (333 NW 13th Ave; 503-894-8978).

Interurban: Over on Mississippi Ave, this relaxed cocktail pub keeps one drink on tap that rotates every week or until the cask runs dry (4057 N Mississippi Ave; 503-284-6669).

Imperial: From wine to cider, this bar loves all drinks on tap, but the draft cocktails include one that features a local vermouth from Imbue, so it’s basically the coolest kid in class (410 SW Broadway; 503-228-7222).
