Jackknife Now Open in Sentinel
Jackknife is now open in the lobby of Sentinel and we’re excited about this for three reasons: John Janulis (Bye and Bye, and Sweet Hereafter), Jake Carey (Dig A Pony) and Provenance Hotels.
These two men and their three establishments have helped create a niche of bars with well-crafted, hip cocktails and elevated bar food. Provenance Hotels throws terrioir (used loosely) out the window when creating hotel bars and in doing so creates a “new sense of place” entirely. E.g. Driftwood Room.
The new downtown bar winds through a variety of distinct architectural spaces. There’s a 50-seat bar, an ornate vintage stained glass ceiling, reclaimed Art Deco hotel lamps, and a double-sided fireplace. Imagine taking all of this in but with the unpretentious vibes Carey and Janulis’ businesses exude.
Justin Diaz, (alum of Whey Bar at Ox, Kask and Dig A Pony), has designed a menu with cocktails such as the Acusador Cocktail made with Bacardi 8, green chartreuse, Commissary grenadine, Peychaud's and Angostura bitters and lemon zest ($9) and the Bonnie Parker made from toasted pecan whiskey, lime and honey with ginger beer ($10), plus more cocktails.
Chef Erik Paulsen, behind the menu at Janulis’ Sweet Hereafter, designed the new menu for Jackknife too. It includes items such as pimento cheese with tomato relish and butter crackers ($6) and potato and ginger fritters with cilantro aioli and coriander ketchup ($6).
Jackknife is open from 11 AM to 2 AM at 614 SW 11th Avenue.
